I bought this gift for my son when he started culinary school.


It was the right choice. He absolutely loved it.


The knives keep their edge amazingly well. The sharpening steel became known in my son’s culinary class as the “magic steel” because of it’s ability to hone a knife so quickly and well.


The knives are surprisingly well balanced and the chef’s knife has to be used to be believed.


It is important to state that one must handle these knives and tools properly and with considerable care to avoid serious injury. What you may be able to get away with when using grandma’s carving knife may result in a trip to the hospital and several stitches.


Imagine drawing a knife, against the grain of a tough cut of beef, with only the weight of blade and still cutting the deeply into the meat. Now imagine six months of *commercial* use and still being able to do it. That is what I mean by holding an edge.
